As my children enter the teen years, I have started thinking about what life will be like as empty nesters. It was great to see this glimpse into the future, and so special to hear how it is to have adult children! Thanks for sharing. Also love your outlook on controlling your calendar; that was convicting!
Hi Heather! I finally asked the sharer about this, and she generously responded:
The three breakfasts (focus on protein and speed to plate):
1) Frozen Kodiak waffle topped with either almond butter or Nutella and whatever fruit is handy with 2 slices precooked bacon.
2) A toast, avocado, egg combo however I'm feeling that day. I often use "egg beaters" aka liquid egg whites and a prepackaged guacamole individual portion for ease and speed.
3) An omelette with whatever is available. When my husband or I prep other meals, I steal some of the ingredients, so a little bit of chopped onion, peppers, tomatoes, spinach etc are nicked away from the dinner recipe and saved in a jar in the fridge for a future omelette. It doesn't take much for a single omelette!
This works for me because the structure of "pick 1 of 3" makes it easy and the variations keep it interesting. Also I keep the egg/omelette pan in the small cabinet in the closest spot by the stove, not with all the other pots, lids, etc. because I need low/no barriers to avoid being deterred from making a quick hot breakfast.
I love this one! Haven’t heard of the 9/80 schedule before but it sounds intriguing. I really admire the calendaring to make sure she controls her time!
I really enjoyed this one, I very much appreciated the rigor of it. (And will likely not achieve it because I am a chaos goblin, but I can admire from afar!) :) Have fun with your baby granddaughter!
I love this one! I’m in the thick of the working mom/elementary school years, but it was fun to hear what the future will look like one day.
I am motivated hearing about a woman in her 60s flourishing in this work environment.
Love hearing about life with children “grown and flown” - can’t wait!

Enjoyed this share as a child free couple.
Raising two teens right now and getting a glimpse at the next chapter was so much fun. Thank you for sharing!
If you don’t mind sharing, what are three breakfasts in rotation? I’m in a breakfast slump right now and tired of my usuals.
